Memorial Day Cooking


What is Memorial Day?

Memorial Day arose out of appreciation for and remembrance of all who gave their lives defending our nation.  Although the holiday was officially proclaimed in 1868 by General John Logan, many towns and communities decorated the graves of American soldiers and gathered to honor our nation's heroes well before Memorial Day was officially declared.  God Bless All of Our Soldiers That Gave Us Our Freedom!



Here are a few recipes you can make today or all summer ~



Homemade Honey BBQ Sauce

Whatever you happen to be grilling - hamburger, steak, chicken or ribs, try this delicious homemade barbecue sauce and add your own special ingredients to it.  There are so many ways to make barbecue sauce, but I'm just providing you with one that doesn't contain loads of sugar and it's easy to make.

Ingredients:

15 oz organic tomato sauce
1 cup spring water
1/2 cup apple cider vinegar
1/3 cup raw honey
1 T lemon juice
2 tsp garlic powder
1 1/2 tsp ground black pepper
1 1/2 tsp ground mustard
1 tsp paprika


Directions:
Combine all the ingredients in a medium saucepan over medium-high heat.  Stir to combine.  Bring to a boil, reduce heat and simmer for 1 hour.  Season with your own ingredients to taste.  Makes 1 1/2 cups.



Watermelon Lemonade with Fresh Mint

Who does not love a glass of lemonade on a hot summer day? This recipe is naturally sweetened by the watermelon so you do not need as much sugar to balance with the lemon juice as you will find in other lemonades. All you need is half a watermelon, 4 lemons, a pint of raspberries, fresh mint, spring water and a little cane sugar. If your watermelon is ripe enough, you may not need any sugar!

Ingredients:
6 cups watermelon cubes (seeds removed)
¼ cup fresh organic raspberries
1 cup spring water
1/3 cup raw honey (optional)
½ cup fresh lemon juice
Fresh mint to garnish

Watermelon slices to garnish

Directions:
Place watermelon, raspberries and water in container of food processor and blend until smooth. Strain through fine sieve into pitcher. Stir in sugar and lemon juice and continue stirring until sugar dissolves. Refrigerate until chilled, about 1 hour. Yield: 4 servings




Patriotic Pound Cake

An easy finale to your barbecue meal is this rich and buttery pound cake.  Serve it with fresh organic blueberries, strawberries and whipped cream and you'll have the perfect Patriotic Pound Cake.  It's so good, you may want to double the recipe for a large family gathering.

Ingredients:

3/4 cup unsalted butter (softened)
1 1/2 cups organic cane sugar
3 large eggs
2 tsps pure vanilla extract
1 1/2 cups organic unbleached flour
1/4 tsp baking soda
pinch sea salt
1/2 cup organic sour cream

Directions:


Position a rack in the lowest third of the oven and preheat to 300 degrees.  Butter a 9 x 5-inch loaf pan; set aside.

Place the butter and sugar in a medium bowl and beat with a mixer until smooth.  Add the eggs, one at a time, beating until the mixture is light and fluffy.  Add the vanilla extract.

In a medium bowl, whisk together the flour, baking soda and salt.  Add the dry ingredients to the batter on low speed in two additions, alternating with the sour cream.

Spoon the batter into the loaf pan and bake until the cake is set and a toothpick inserted into the middle of the cake comes out clean, 75-85 minutes.  Remove from oven and cool.

Cut into slices and add fresh cut strawberries and blueberries.  Top with a dollop of organic whipped cream.

Homemade Organic Condiment Recipes



BBQ season is here!  There are some of you who grill all year round, but for some of us, Memorial Day seems to be kick-off day to start up our grills.  Today I will share with you some quick, easy, healthy and organic recipes to help make your burger better, by making over some of our favorite condiments, without the additions of soy, sugars, preservatives, additives and GMOs.

Make sure you are buying the best hot dogs (nitrite and nitrate free) and quality ground beef, which will be grass-fed, hormone and antibiotic free. Grass-fed beef is better, not just for our health but for our environment.

Now let’s make our burger better by making a few homemade, healthy versions of our favorite store bought condiments. You will never go back to store bought after trying these deliciously, easy and good for you, homemade versions.


Quick Organic Ketchup Recipe

Ingredients:

6 ounces organic tomato paste
1/4 cup raw organic honey
1/2 cup organic white vinegar
1/4 to 1/2 cup spring water (more or less for consistency you desire)
3/4 teaspoon fine sea salt
1/4 teaspoon organic garlic powder
1/4 teaspoon organic onion powder

Directions:

Whisk together all ingredients in a medium saucepan over medium heat and bring to a slow boil. Reduce heat to low and simmer for 20 minutes; stirring frequently. Remove from heat, cool at room temperature. Store in an airtight container in the refrigerator.

Organic Mustard Recipe

Ingredients:

1/4 cup dried organic mustard powder
3/4 cup sping water
1/2 cup plus 1 tbsp. organic distilled white vinegar
1 1/2 tsp. arrowroot powder
1 tsp. fine sea salt
1/2 tsp. organic turmeric
1/8 tsp. organic garlic powder
1/8 tsp. organic paprika

Directions:

Combine all of the ingredients in a small saucepan. Whisk the mixture until it’s smooth over medium heat, bringing to a low boil. Reduce the heat to medium-low after the mustard comes to a boil, simmering for -about five minutes and stirring often. Remove the mustard from heat and place it in a covered container in the refrigerator for several hours until fully cooled (it will thicken as it cools)

Organic Mayonnaise Recipe

Ingredients:

4 egg yolks at room temperature
1 TBSP lemon juice or apple cider vinegar
1 Tsp regular or Dijon mustard (or ½ tsp dried mustard)
Salt and pepper
 2/3 cup olive oil
 2/3 cup coconut oil (warm) or other healthy oil (macadamia works well)

Directions:

Put egg yolks into blender or bowl and whisk/blend until smooth.  Add lemon juice or vinegar, mustard and spices and blend until mixed. SLOWLY add oil while blending or whisking at low speed, starting with olive oil.  Start with a drop at a time until it starts to emulsify and then keep adding slowly until all oil is incorporated.  Store in fridge up to 1 week.

Delicious Healthy Beef Mushroom Stroganoff




The origin and history of Beef Stroganoff dates backs to 19th century. Although not a new recipe, at that time but a refined version of an even older Russian recipe, it had probably been in the family of Count Pavel Stroganoff's for some years and had become well known through his love of entertaining. Count Pavel Stroganoff was a celebrity, a dignitary at the court of Alexander III, a member of the Imperial Academy of Arts, and a known gourmet. Given Beef Starngoff's history, it is doubtful that Beef Stroganoff was his or his chef's invention since the recipe was included in the 1871 edition of the Molokhovets cookbook, which clearly pre-dates his fame as a gourmet.


Healthy Beef Mushroom Stroganoff

(SERVES 4)

Ingredients:

5 Tbls. organic butter
1 pound of  grass-fed top sirloin or tenderloin, cut into thin strips
1/3 cup chopped shallots
2 cloves minced garlic
1/2 pound organic cremini or white button mushrooms, sliced
 2 teaspoons of chopped fresh tarragon
1 cup organic sour cream at room temperature
Sea salt and pepper (to taste)
Fresh Parsley ( garnish)

Directions:
  • Melt 3 Tbsp of butter in a large skillet on medium heat. Increase the heat to high/med-high and add the strips of beef. You want to cook the beef quickly, browning on each side, so the temp needs to be high enough to brown the beef, but not so high as to burn the butter. While cooking the beef, sprinkle with some salt and pepper. When both sides are browned, remove the beef to a bowl and set aside.
  • In the same pan, reduce the heat to medium and add the shallots and garlic. Cook the shallots and garlic for a minute or two, allowing them to soak up any meat drippings. Remove to the same bowl as the meat and set aside.
  • In the same pan, melt another 2 Tbsp of butter. Increase heat to medium high and add the mushrooms. Cook, stirring occasionally for about 4 minutes. While cooking, sprinkle tarragon on the mushrooms.
  • Reduce the heat to low and add the sour cream to the mushrooms. Mix in the sour cream thoroughly. Do not let it come to a simmer or boil or the sour cream may curdle. Stir in the beef with the shallots and garlic. Add salt and pepper to taste. Garnish with fresh parsley.

Serve immediately over whole-grain noodles, mashed potatoes or organic rice.

Aspartame: The Most Dangerous Substance Added to Most Foods Today



I am sure you have all heard of aspartame, a chemical discovered by accident in 1965, and now used in almost every food on the market. It just so happens that it is also one of the most dangerous food additives today!

Aspartame has had a long history of legal battles, being stopped by the FDA multiple times. In fact, when reapproved, there was plenty of controversy and corruption accusations surrounding the chemical.

A brief history:

Aspartame was approved for dry goods in 1981 and carbonated beverages in 1983. It was originally approved for dry goods on July 26, 1974, but objections filed by neuroscience researcher Dr. John W. Olney and Consumer attorney James Turner in August 1974, as well as investigations of G.D. Searle’s research practices caused the U.S. Food and Drug Administration (FDA) to put approval of aspartame on hold (December 5, 1974). In 1985, Monsanto purchased G.D. Searle and made Searle Pharmaceuticals and The NutraSweet Company separate subsidiaries.

Aspartame was once used by the Pentagon as a biochemical warfare agent. Making the fact that it is a integral part of the modern diet. Hidden under such names as NutraSweet, Equal, Spoonful, and Equal-Measure. It is found in more than 6,000 foods; this means that you and your family are probably among the two-thirds of the population who regularly ingest this artificial sweetener.

It contains no calories making it a favorite among dieters and “health” conscious individuals everywhere, under the guise that it is safe. But, I am here to tell you that it is far from safe! It accounts for 75 percent of the adverse reactions to food additives recorded by the FDA. Many of these reactions are very serious including Headache/Migraine, dizziness, seizures, nausea numbness, muscle spasms, weight gain, rashes, depression, fatigue, irritability, tachycardia, insomnia, vision problems, hearing loss, heart palpitations, anxiety, slurred speech, loss of taste, and memory loss among many others.

Aspartame contains several major components: methanol, phenylalanine, and aspartic acid. All of which have been individually shown to possibly stimulate brain solar cells to death. They disturb the hormonal balance in the brain. They even act as nerve poison. Aspartame has been known to cause birth defects to help you to imagine small, developing children. They are particularly subject to its ill side effects.

Aspartame is falsely advertised as a health product, but it is far from it. “it causes unstable blood sugar levels that increase the appetite and cravings for sweets/sugar.”

While aspartame may be considered safe by the FDA, 85% of all complaints registered by the FDA are for adverse reactions to aspartame, this includes five reported deaths. When you take a closer look, you will see the real hidden dangers of the artificial sweetener.

Aspartame accounts for over 75 percent of the adverse reactions to food additives reported to the FDA. Many of these reactions are very serious, including seizures and death. A few of the 90 different documented symptoms listed in the report as part of aspartame dangers are:

Tachycardia   Insomnia   Vision problems    Hearing loss

Organic Key Lime Pie



This pie is not only delicious but also good for you. It is made of all natural, wholesome ingredients and is unlike any Key Lime Pie you have ever had. Most Key Lime Pies contain sweetened condensed milk which is one of the worst substances you can ever put in your body. 

This pie is actually made with avocados!  Avocados are rich in Vitamin E and provide you with plenty of good satiating fat. This pie also contains lots of lime juice. Lime juice is very cleansing to the liver. Coconut milk is also one of the ingredients and it serves to help strengthen your immune system and protect you from foreign invaders. 

The crust is made of nuts which are another source of good fat as well as adding a very nutty, delightful texture. And dates are added to help sweeten this pie crust naturally. You will need a blender, food processor and a spring form pan to make this. This pie would be a great summertime treat for your family. 

INGREDIENTS

Pie Crust
6 pitted dates
1 cup macadamia or cashew nuts
1 cup pecans
½ teaspoon vanilla
¼ teaspoon cinnamon
Pinch of sea salt

Filling
1 1/2 cups lime juice
1 cup raw honey
½ cup organic coconut milk
2 cups avocado (about 2 avocados)
1 tablespoon vanilla
Pinch of sea salt
1 cup coconut oil (helps to hold the pie together)

Whip Cream
2 cups organic heavy whipping cream
1 teaspoon vanilla extract
1 tablespoon raw honey

Directions

  1. Place dates in the food processor and process until they become a paste.
  2. Add nuts, vanilla, cinnamon and salt and process until crumbly.
  3. Pat this mixture down in the spring form pan and up the sides creating a thick crust.
  4. Blend filling ingredients in blender until smooth. Pour into pie crust. Place in freezer and freeze for 1 hour.
  5. Meanwhile, whip cream until it forms soft peaks. Spread whipped cream onto pie and place back in freezer 2 hours more. Freeze for 3 hours total or longer.
  6. When you are ready to serve, remove from freezer and let sit 1 hour before serving to soften. Slice and serve. 
  7. Garnish with lime slices, raspberries and mint leaves.

Homemade Coconut Vanilla Lip Balm



Lip balms made at home are healthier than store bought varieties. Unfortunately, many commercial lip balms are made with unstable, refined vegetable oils, "medicated" with harsh acids, and infused with artificial fragrances that can actually irritate and disrupt the fragile first layer of skin on the lips. Thus, while you may be globing on more and more lip salve for relief, it can be the very thing that is causing dryness and discomfort!

You can blend up your very own inexpensive, custom lip treatment in the kitchen in no time at all using my recipe.

Coconut Vanilla Lip Balm Recipe

Ingredients:

2 tablespoons mango butter or cocoa butter (or blend of both)

2 tablespoon virgin coconut oil

2 tablespoons beeswax, pastilles or shredded

1 tsp pure vanilla extract

Instructions:

Coarsely chop or grate the beeswax and butters if in solid block form (if using pastilles skip this step).

Measure out equal parts tightly packed, grated beeswax and butters into a mason jar or small glass pyrex measuring cup. Add of coconut oil as well.

Prepare a double boiler system by adding about 1-2” of water to a small pot. Submerge bottom of mason jar or measuring cup in water. Heat water on medium-low to melt contents, stirring occasionally. Monitor to ensure that the water does not boil over the rim into blend.

Once melted together, immediately remove from heat and add vanilla extract to mix. Take care to handle jar with proper protection, as it will be hot. Stir vigorously to combine.

Pour the hot mixture into lip balm containers. Use tubes or tubs to your preference. To speed up cooling process, place containers in the refrigerator to set. Use as you would any other lip balm and enjoy!

Dear Jordan, 

You left me too soon my darling son and today would have been your 30th birthday.  Losing you in a senseless automobile accident was the most devastating day of my life.  The hole in my heart can never be filled because there will never be another you.  God blessed me the moment you were born my dear son, and through the years you gave me so much joy and love.  The kind of love that only a mother could understand - the special bond that exists between a mother and her son.

I was fortunate to have you in my life for only 17 years, and I was so proud of you my son, I loved you more than words could ever say - but you knew that.  I often think about the loss of your future not yet lived, your wedding day never to come, and the grandchildren I will never see.  Most of all, I miss you calling me "Mom", the sound of your voice which echoes in my head even today.  I have cherished and kept all of your artwork, report cards, and mementos to take out and look at when I feel the need to be close to you.

Your photos serve to remind me of the short time we had together and how fast you grew up right before my eyes.  I miss you my darling son, so forgive me if I cry for you on this day and many days. If I'm sad it's because you were my only child, my heart, and you meant everything to me.  


Happy Birthday Jordan - I'll be seeing you when I get there!  Until then, I will miss you and love you as I always have since you passed away.

Delicious Dark Chocolate Chunk Cookies

Nothing tastes like gooey dark chocolate chunk cookies right from the oven. Learn how to make fresh chocolate chunk cookies at home with my recipe.  

Ingredients:

1 3/4 cups unbleached organic all purpose flour
1/2 tsp baking soda
14 tbsp organic unsalted butter (1 3/4 sticks)
1/2 cup organic cane sugar
3/4 cup organic packed dark brown sugar
1 tsp sea salt
2 tsp organic vanilla extract
1 large free-range egg
1 large free-range egg yolk
1 1/4 cup organic dark chocolate chunks
3/4 cup organic chopped walnuts


Directions:

1. Position oven rack in middle and preheat oven to 375 degrees

2. Butter cookie sheets

3. Whisk flour and baking soda together in a medium bowl, set aside

4. Heat 10 tbsp of butter in a (non cast iron) skillet over medium-high heat until melted, 2 minutes

5. Continue cooking and stirring constantly until butter is dark brown, 1-3 minutes

6. Remove from heat and pour into a heat proof bowl. Melt remaining 4 tbsp into hot butter.

7. Add both sugars, salt and vanilla to bowl with butter and whisk together.

8. Add egg and yolk and whisk until smooth, about 30 seconds

9. Let mixture stand for 3 minutes and then whisk for another 30 seconds.

10. Repeat process of resting and whisking until mixture is thick and shiny

11. Using a rubber spatula, stir in flour mixture until just combined, about 1 minute

12. Add chocolate chips and nuts and mix until just combined

13. Divide dough into 16 portions, each about 3 tbsp

14. Arrange 2 inches apart on the cookie sheets.

15. Bake for 12 minutes, rotating the pan halfway through

16. Cool and serve

These cookies are amazing! The extra step of browning the butter makes a huge difference.

Celebrate Cinco de Mayo with 3 Popular Mexican-American Recipes!

Cinco de Mayo, the day Mexico celebrates its victory over France in the Battle of Puebla in 1862.  This holiday is extremely popular in the US with Mexican-American citizens who celebrate with parades, parties and an array of Mexican foods.

Satisfy your cravings with three of my favorite Mexican-American recipes to celebrate this day.  


GUACAMOLE


Ingredients: Always organic!

 * 3 avocados - peeled and pitted
 * 2 T. lime juice 
 * 1/2 tsp. sea salt
 * 1/2 cup diced onion 
 * 3 T. chopped fresh cilantro
 * 2 roma (plum) tomatoes, diced
 * 1 tsp. minced garlic 
 * 1 pinch ground cayenne pepper


Directions:

For smooth Guacamole -
1) Add all the ingredients to blender, except the onion and tomatoes, and process until smooth.  Then mix in the onion and tomato.

For chunky Guacamole -
1) In a medium bowl, mash the avocados with a fork and add the remaining ingredients.

Refrigerate for 1 hour for the best flavor or serve immediately with taco chips.  Serves 4.






MEXICAN CHICKEN & BEAN CASSEROLE











Ingredients:

* 1 lb. chicken ( I use Bare), cooked and shredded
* 2 (16 oz) cans black beans, drained
* 1 (16 oz) can corn, drained
* 1 (8 oz) can tomato sauce
* 1 cup salsa 
* 1 cup red onion, chopped 
* 1 green pepper, diced
* 1/4 cup chopped cilantro 
* 1 T. minced garlic 
* sea salt and pepper
* 12 oz shredded cheese

Directions:

1) Preheat oven to 350 degrees.

2) Combine the chicken, beans, corn, tomato sauce, salsa, onion, bell pepper, cilantro, garlic, sea salt and pepper in a bowl.

3) Place half the mixture in a 13 x 9 inch baking dish and sprinkle with half the cheese.

4) Add the remaining chicken mixture and sprinkle with t6he rest of the cheese.

5) Bake for 30 minutes and let stand for 5 minutes before serving.

*Add tomato or cilantro as a garnish on the side -






Enjoy a delicious fresh strawberry margarita smoothie after your dinner & have one for me!

FRESH STRAWBERRY MARGARITA SMOOTHIE

Ingredients:

* 2 oz tequila 
* 1 oz triple sec
* 3 oz lime juice 
* 1/2 cup fresh organic strawberries (trimmed)
* Raw honey ( about 1/2 T. to sweeten) - optional
* 1/2 cup crushed ice
* salt or sugar rim of glass

Preparation:
* Puree in blender until smooth and garnish with a fresh strawberry on the rim.

Chemotherapy Kills Patients Faster Than No Treatment At All



Doctors, drug companies, hospitals and other key stakeholders profit heavily each time a cancer patient submits to the conventional treatment model, which typically involves injecting chemotherapy poisons into the body, blasting it with ionizing radiation or cutting off body parts -- or some barbaric combination of all three.

It might rub some people the wrong way to state this, especially those who've had to watch a loved one die from conventional cancer treatment, but each of these supposed treatments don't actually work, in many cases. Little-known science, which the medical-industrial complex has made it a practice to ignore or cover up, reveals that, despite what the medical industry often claims, chemotherapy in particular just isn't an effective cancer treatment.

Dr. Hardin B. Jones, a former professor of medical physics and physiology at the University of California, Berkeley, had been studying the lifespans of cancer patients for more than 25 years when he came to the conclusion that, despite popular belief, chemotherapy doesn't work. He witnessed a multitude of cancer patients treated with the poison die horrific deaths, many of them meeting their fate much earlier than other patients who chose no treatment at all.

After investigating this further, Dr. Jones found that cancer patients who underwent chemotherapy actually died more quickly, in most cases, than those who followed their doctors' recommendations by getting the treatment.

"People who refused treatment lived for an average of 12 and a half years," stated Dr. Jones about his study's findings, which were published in the journal Transactions of the New York Academy of Sciences. "Those who accepted other kinds of treatment lived on an average of only 3 years."

Breast cancer patients who reject all conventional therapies live four times longer than those who follow the system!

Refusing conventional cancer treatments and doing nothing resulted in cancer patients living more than four times longer than their more compliant counterparts. This is something you'll never hear about from the mainstream media, which continues to peddle the myth that cancer patients somehow need poison injected into their bodies in order to survive and reach "cure" status.

Dr. Jones' study also found that the same is true concerning conventional treatments for breast cancer. Women with breast cancer who refused chemotherapy, radiation and surgery -- and remained untreated -- likewise lived four times longer than women who went under the knife or agreed to be poisoned with chemicals.

A recent study published in the journal Clinical Oncology back in 2004, stated that chemotherapy is really only effective about 2 percent of the time for all cancers. And this is based on the standard five-year survival rate criteria, which isn't technically indicative of a cure -- even though health authorities often like to claim it is.

Overall survival of patients with primary breast cancer has not improved in the past 10 years, despite increasing use of multiple-drug chemotherapy.

There has been no improvement in survival from first metastasis, and survival may even have been shortened in some patients given chemotherapy.

Healthy Oatmeal Raisin Cookie Bars




Quick and easy to make, my recipe for healthy oatmeal raisin bars are delicious and healthy!  

Oatmeal Raisin Cookie Bars

Try not to overbake these, as the texture will be less chewy and the bars could eventually become dry (they are fairly moist, for a cookie, when properly baked). I judge cookies to be done by looking for a golden brown color around the edges and for the cookie to look “set” and not wet/raw in the center. The standards are the same here, and the top of the bars should take on a light golden color as the bars finish baking.

Ingredients:
1 cup organic all purpose flour
1/2 cup organic cane sugar
1/2 cup coconut palm sugar or (organic light brn sugar)
1/2 tsp baking soda
1/2 tsp sea salt
1/2 tsp ground ceylon cinnamon
1/4 tsp freshly ground nutmeg
1 tsp vanilla extract
1 large organic egg
1/2 cup organic butter, melted and cooled
2 cups organic oats (not instant)
1 1/2 cups organic raisins

Directions:
1. Preheat oven to 350F. Line an 8×8-inch baking pan with parchment paper (optional) or butter pan and lightly dust with flour.

2. Whisk together flour, sugars, baking soda, salt and spices in a large bowl.

3. Make a well in the center of the flour mixture and stir in vanilla, egg and melted butter until smooth. Stir in oats and raisins until they are evenly distributed.

4. Pour dough into prepared pan and spread into a even layer with a spatula or your fingers.

5. Bake for 22-26 minutes, or until bars are set and the center no longer looks wet. Edges will be golden brown. Cool pan on a wire rack before slicing.

6. Cut into 18 rectangular bars to serve.

Makes 18.

Easy Homemade Cheesecake Recipe



It is possible to make the most delicious homemade cheesecake right in your own kitchen. This is one of the best and simplest cheesecake recipes that you will find and your family and friends will love it! My cheesecake recipe is perfect for guests or just a weekend dinner.

This delicious cheesecake is easy to prepare and will rival that of any great restaurant or deli.

You can substitute all ingredients for organic ingredients, or you can only substitute a few. It is completly up to you and your budget. The creativity makes it your own personal recipe. Plus some ingredients are difficult to find as organic.

Ingredients:

For the Crust
1 1/2 cups fine graham cracker crumbs
5 tablespoons unsalted organic butter, melted
1 tablespoon organic cane sugar

For the Filling
16 ounces organic cream cheese (room temperature)
2/3 cup organic cane sugar
1 cup organic sour cream
5 large eggs (room temperature)
1 tablespoon vanilla extract
1/2 cup organic heavy cream

Directions:

1)Position a rack in the middle of the oven and preheat to 350 degrees F.

2) To make the crust: In a small bowl, mix the cracker crumbs with the melted butter and the sugar together until evenly moistened. Press the crumb mixture onto the bottom of a spring-form pan or if you don't have one, use a cake or pie pan. Bake the crust until golden brown, about 10 to 12 minutes. Cool the pan on a rack.

3) Lower the oven temperature to 325 degrees F. In the bowl of a standing mixer or with a hand-held mixer, cream the cream cheese on medium speed until smooth. Gradually add the sugar and beat until light and fluffy. (Stop mixing and scrape down the sides of the bowl and beaters as needed.) Beat in the sour cream. Add the eggs, one at a time, beating well after each addition. Slowly beat in the vanilla and the heavy cream. Pour the batter into the prepared pan.

4) Bake until the top of the cheesecake is lightly browned, but the center still jiggles slightly, about 45 minutes. Cool the cake in the pan on a rack. Cover with plastic wrap and refrigerate overnight before serving.

5) To remove the cake from the pan, run a knife or offset spatula around the edges to release the edges from the pan.

6) Cut the cheesecake into wedges and serve with fresh blueberries or any fresh berries you prefer. Another idea is to drizzle melted chocolate over it or choose any topping that suits your taste!

Homemade Delicious Cheese & Bean Burritos


My recipe for burritos is so easy to make! Roll up a few burritos, bake them and eat them now or freeze individually for super-easy lunches and dinners down the road. Add a side of brown rice and overall they are a wonderful healthy choice.

The main ingredients I use in my burritos are delicious even though they are store bought. Fast food burrito chains can’t even come close to this level of nutrition and quality.

Ingredients
6 small organic whole grain tortillas
1 can black beans, drained and rinsed (I use Eden Organic Canned black beans)
2 cups organic salsa or homemade salsa
3 oz cheddar cheese (or your favorite)
chilli powder to taste
½ of an onion chopped
Toppings: avocado, sour cream, lime wedges

Directions:
  • Preheat oven to 375 degrees for 10 minutes
  • Place tortillas on top of parchment paper lined aluminum foil 
  • Place ¼ cup of black beans on each tortilla
  • Sprinkle chili powder on top of black beans (to taste)
  • Add about a tablespoon of onion on top of beans
  • Top each burrito with one tablespoon of salsa
  • Shred cheese and top each burrito with a handful
  • Roll and wrap each tortilla tightly
  • Put the burritos in oven on a rack.  
  • Store burritos in a ziplock bag in the freezer until ready to use.
  • Cooking time varies: Fresh burritos - 10 mins; Defrosted burritos - 20 mins and frozen burritos - 30 mins. 
  • Serve with avocado, romaine, sour cream, lime wedges 
  • Store leftover burritos in the freezer (ziplock freezer bag until ready to use)

Spinach Souffle


Moist and light as a feather, this soufflé takes the concept of vegetables to a new level. Even professed spinach-haters like this dish! Many cooks are hesitant to try their hand at making soufflés, but there is nothing mysterious or difficult about the process. If you know how to beat and fold egg whites into a base, your soufflé will be a success. Perhaps the most difficult part of making a soufflé is knowing when it should be taken out of the oven. Use your nose as a guide and remember that a soufflé is meant to be very moist, not dry. Even if your soufflé falls before it gets to the table, it will still taste delicious!


Serves 4 to 6
Ingredients:
2 tablespoons organic unsalted butter, for greasing soufflé dish
3 tablespoons finely grated Parmesan, for dusting soufflé dish
3 tablespoons unsalted butter
3 tablespoons organic all-purpose flour
1 cup organic milk
1/2 teaspoon sea salt
1/4 teaspoon freshly ground pepper
Few grinds of fresh nutmeg
3 cups (packed) fresh organic baby spinach, chopped, about 5 ounces
1/2 cup grated Parmesan
4 large egg yolks
6 large egg whites, at room temperature

Directions:
Butter a 1 1/2 quart soufflé dish. Dust the sides and bottom lightly with the 3 tablespoons of Parmesan; set aside.

Melt the 3 tablespoons of butter in a pan over medium heat. Whisk in the flour and cook, stirring constantly, for 2 minutes. Add the milk all at once and whisk to blend. Add the salt, pepper, and nutmeg and cook until the sauce thickens, 2 to 3 minutes.

Add the spinach to the hot béchamel sauce and cook until it wilts, about 3 minutes. Whisk in the egg yolks and cheese, then remove from the heat, and transfer mixture to a large bowl. Let cool for at least 15 minutes.

Position a rack in the lower middle of the oven and preheat to 375 F.

Place the egg whites in a clean bowl and beat with an electric mixer until foamy. Continue beating until the whites form soft and shiny peaks. Do not over beat or the whites will be stiff and dry.

Stir one-quarter of the egg whites into the spinach base to lighten the mixture. Quickly fold in the remaining whites. Don't worry if the whites are not evenly distributed: it is better to have some streaks rather than deflate them.

Transfer the mixture to the prepared pan. Place on a baking tray in the oven and cook until the soufflé has puffed and risen 1 to 2 inches above the rim of the dish, 25 to 35 minutes. When a soufflé is cooked, you can generally tell because the aroma of it permeates the room. The soufflé should still be moist in the center but firm around the edges. Avoid the temptation of opening the oven to check on it, as you will lose the heat and the soufflé may fall.

Serve immediately.

Sauteed Chicken & Mushrooms In Wine Sauce




Here is my recipe for:

Sauteed Chicken & Mushrooms in Wine Sauce

Ingredients
1-pound boneless skinless chicken breasts or thighs, cut into bite sized pieces
1/4 -1/2 cup organic all purpose flour or rice flour
3 tablespoons olive oil
1 tablespoon unsalted organic butter
1 onion, chopped
1 garlic clove, finely chopped
2 cups Crimini or White Button mushrooms, sliced
1/2 cup Moscato wine or a favorite white wine.
1 tablespoon chopped parsley
sea salt and pepper to taste

Directions
1. Mix the salt, pepper and flour together.
2. Place the chicken into a large bowl and lightly coat with the flour mixture.
3. Heat a large skillet to low-medium and add olive oil and butter.
4. Add the onion and garlic - Sauté for 3-4 minutes.
5. Add the mushrooms - Sauté for another 3 minutes.
6. Stir in the coated chicken pieces. Cover and cook about 6-8 minutes until chicken is done.
7. Add the wine and stir to combine until sauce thickens.
8. Add the chopped parsley to the mixture and stir. Salt and pepper to taste.
9. Reduce the heat to low and cover until ready to serve
10. Serve the chicken over rice, pasta or quinoa.

Eliminating Inflammatory Foods from Your Diet



Study after study shows that the risk of heart disease and cancer are modifiable by our lifestyle choices which include the food we choose to eat each day. With every bite we take, we're either balancing the pro- and anti-inflammatory compounds in the body, or tipping the scale to one end.

Other than adding more natural anti-inflammatory foods in your diet, it is also equally important to avoid or cut down on foods which are known to promote inflammation. Here are the top ten foods which promote inflammatory diseases:

Sugars
Pro-inflammatory:  Excessive sugar intake causes tooth decay and has been linked to increased risks of obesity, inflammation and chronic diseases such as metabolic syndrome and type 2 diabetes. Recently, it has also finally been proven that sugar, as well as dairy, are the causes of acne.

Sugar-sweetened drinks-soft drinks, fruit drinks and punches are some of the major sources of dietary sugars that many have overlooked. Do you know that drinking a can of Coke is as good as sucking ten sugar cubes? Other obvious sugar-loaded foods to avoid or at least limit include pastries, desserts, candies and snacks. And when you are looking out for sugar in the ingredients list, note that sugar has many names: corn syrup, dextrose, fructose, golden syrup, maltose, sorghum syrup and sucrose are some of the creative names used.

*Opt for natural sweeteners like stevia, honey, or blackstrap molasses to flavor beverages and foods modestly. Natural sugars found in fresh or dried fruits and fruit preserves with no added sugar are also great choices. Not only do they give you the sweetness you crave, fruits also supply you with vitamins, antioxidants and fibers that you won't find in sugary foods and drinks.

Common Cooking Oils
Pro-inflammatory: Common vegetable cooking oils used in many homes and restaurants have very high omega-6 fatty acids and dismally low omega-3 fats. A diet consisting of a highly imbalanced omega-6 to omega-3 ratio promotes inflammation and breeds inflammatory diseases like heart disease and cancer. Polyunsaturated vegetable oils such as grape seed, cottonseed, safflower, corn and sunflower oils. These industrial vegetable oils are also commonly used to prepare most processed foods and takeaways.

Anti-inflammatory: Replace your omega-6-saturated cooking oils with macadamia oil, extra virgin olive oil, or other cooking oils with a more balanced omega-6 to omega-3 fatty acids ratio. Macadamia oil, for instance, has an almost one-to-one ratio of omega-6:3 fats, and it is also rich in oleic acid, a heart-healthy, monounsaturated fatty acid.

Trans Fats
Pro-inflammatory: Trans fatty acids are notorious for their double whammy effect: they increase the levels of 'bad' cholesterol, while lowering levels of the 'good' cholesterol. But that is not all they can do. They have also been found to promote inflammation, obesity and resistance to insulin, laying the ground for degenerative illnesses to take place.

*Deep fried foods, fast foods, commercially baked goods and those prepared with partially hydrogenated oil, margarine and/or vegetable shortening. Note that items that list 0g trans fats on the label may still contain some amount of these toxic fats. This is because in the US, the government allows items containing less than 0.5g of trans fats to be declared as trans-fat free. Commercially prepared peanut butter is one good example. Your best bet is to read the ingredients list and make sure partially hydrogenated oil or vegetable shortening is not used.

Anti-inflammatory: Look for alternative products that contain no trans fats, and that do not have partially hydrogenated oil or vegetable shortening in the ingredients list. When in doubt, assume that all commercially prepared foods contain trans fats unless stated otherwise.

Dairy Products
Pro-inflammatory: As much as 60% of the world's population cannot digest milk. In fact, researchers think that being able to digest milk beyond infancy is abnormal, rather than the other way round. Milk is also a common allergen that can trigger inflammatory responses, such as stomach distress, constipation, diarrhea, skin rashes, acne, hives and breathing difficulties in susceptible people.

* Milk and dairy products are as pervasive as foods containing partially hydrogenated oil or omega-3-deficient vegetable oil. Apart from obvious milk products like butter and cheese, foods with hidden dairy content include breads, cookies, crackers, cakes, cream sauces and boxed cereals.

Anti-inflammatory: Kefir and unsweetened yogurt are acceptable in moderation for those who are not allergic to milk. They are easier on the stomach as the lactose and proteins in the milk have been broken down by beneficial bacteria and/or yeasts.

Feedlot-Raised Meat
Pro-inflammatory: Commercially produced meats are feed with grains like soy beans and corn, a diet that is high in inflammatory omega-6 fatty acids but low in anti-inflammatory omega-3 fats. Due to the small and tight living environment, these animals also gain excess fat and end up with high saturated fats. Worse, to make them grow faster and prevent them from getting sick, they are also injected with hormones and fed with antibiotics. The result is one piece of meat which you and I shouldn't be eating.

*Unless otherwise stated, most, if not all, beef, pork and poultry you can find in the supermarkets and restaurants come from feedlot farms.

Anti-inflammatory: Organic, free-range animals that are fed a natural diet such as grasses instead of grains and hormones contain more omega-3 fats. Having more room to roam freely, they are also leaner and contain less saturated fats.

Red & Processed Meat 
Pro-inflammatory:  Researchers at the University of California San Diego School of Medicine found that red meat contains a molecule that humans don't naturally produce called Neu5Gc. After ingesting this compound, the body develops anti-Neu5Gc antibodies – an immune response that may trigger chronic inflammatory response. Low-grade, simmering inflammation that won't go away has been linked to cancer and heart disease.

The link between processed meat consumption and cancer is even stronger. In the 2007 report by the World Cancer Research Fund and the American Institute for Cancer Research, processed meat has been stated as a convincing cause of cancers of the colon and rectum, and possibly of the esophagus and lungs too. Processed meat includes animal products that have been smoked, cured, salted or chemically preserved.

*Common red meats are beef, lamb and pork, while processed meats include ham, sausage and salami.

Anti-inflammatory: You don't need to avoid red meat totally, though the same thing cannot be said for processed meat. No amount of processed meat is safe. Replace the bulk of your red meat with organic vegetables, poultry and fish, and relegate red meat to a weekly treat. When you do eat red meat, remember to choose lean cuts and preferably, that of grass-fed animals. To reduce the formation of heat-generated food contaminants, it is also advisable not to overcook your meat and use moist heat cooking like stewing and boiling more often than high-temperature dry heat methods such as grilling and frying.

Alcohol   

Pro-Inflammatory:  Regular high consumption of alcohol has been known to cause irritation and inflammation of the esophagus, larynx (voice box) and liver. Over time, the chronic inflammation promotes tumor growth and gives rise to cancer at the sites of repeated irritation.

*Beers, ciders, liquors, liqueurs, and wines.

Anti-inflammatory:  Spring or Filtered Water, or anti-inflammatory jasmine green tea? If you find the idea of swapping ethanol for water or tea implausible, at least limit your consumption to no more than one drink a day.

Refined Grains
Pro-inflammatory: A lot of the grains we eat nowadays are refined. They are devoid of fiber and vitamin B compared to unpolished and unrefined grains that still have the bran, germ and the aleurone layer intact. This makes refined grains as good as refined sugars, which are practically empty calories. And like refined sugars, refined grains have a higher glycemic index than unprocessed grains and when they are consistently consumed, can hasten the onset of degenerative diseases like cancer, coronary disease and diabetes.

*Products made from refined grains are almost everywhere. The common ones are: white rice, white flour, white bread, noodles, pasta, biscuits and pastries. To make things worse, many products with refined grains undergo further processing to enhance their taste and look, and are often loaded with excess sugar, salt, artificial flavors and/or partially hydrogenated oil in the process. A prime example is boxed cereals which contain substantial amounts of added sugar and flavorings.

Anti-inflammatory: Processed grains if you are not gluten intolerant or allergic to grains. If you are an avid bread or pastry maker, invest in a grain mill to produce your own flour. It will be much fresher than the stale grain found in stores. When buying cereals or other products made from grains, don't take the words on the packaging for granted. Just because the box says whole grains, it does not mean the grains inside are 100% intact. The problem is due to a lack of an internationally accepted definition for the word 'whole grain'. When in doubt, if it does not look close to its natural state, don't buy it.

Artificial Food Additives
Pro-inflammatory: Some artificial food additives like aspartame and monosodium glutamate (MSG) reportedly trigger inflammatory responses, especially in people who are already suffering from inflammatory conditions such as rheumatoid arthritis.

*Only packaged foods contain artificial food additives. If you need to buy them, read the labels carefully and weigh your risks. If you order Chinese takeaways, make sure you have the option to ask for no MSG. Otherwise, look elsewhere.

Anti-inflammatory: Besides limiting the consumption of processed foods, use anti-inflammatory herbs, spices or natural sweeteners to add flavor to your dishes instead of relying on food additives.

Pro-inflammatory Allergens
Many people are sensitive to certain foods but are totally unaware of it. Unlike food allergies whereby symptoms usually come fast and furious, symptoms caused by food intolerance may take a longer time to manifest. Consequently, when symptoms of food intolerance do appear, they are often brushed off as common minor ailments such as tiredness and headaches. But repeated, long-term exposure to food that irritates can cause inflammation and lead to chronic disease.

Common food allergens are gluten, milk, nuts, eggs and nightshade vegetables. Contrary to common belief, it is possible to develop an allergy to the foods that you eat often.

If you suspect that a particular food may be responsible for your food intolerant response, try avoiding it completely for about two weeks and monitor your reaction. At the end of the abstinence period, re-introduce the food back into your diet. If you are in fact incompatible with it, you should be able to notice the difference in how you feel easily.

BLACK BEAN & MANGO SALAD



Ingredients:
1 can organic black beans, rinsed and drained
1 medium organic mango, peeled and diced
1 avocado, peeled and diced
1 small onion, peeled and diced
1/4 cup minced cilantro
2 Tablespoons organic lemon or lime juice
1/4 teaspoon ground cumin (optional)

Directions:
Combine all ingredients into a mixing bowl. Refrigerate for one hour.
Serves 6.

Serve cold with tortilla chips or warm over quinoa for a complete meal.

How To Pick A Ripe Mango:
  • A red color does not mean it is ripe. If a mango is slightly soft when you gently squeeze it, it is ripe.
  • Look for mangoes free from bruising and "soft spots" that are mushy.

Fat Flush Water & How It Works




You may have heard some of the hype about “Fat Flush Water.” But how exactly does water flush fat out of your system? Clearly, water is not some kind of magic diet supplement. Your body needs enough water everyday to keep hydrated and cleanse itself of unwanted materials. Fat deposits that form on the body can be tough to break down and eliminate, but proper nutrition and exercise can help greatly with this.

Fat is broken down when the body uses its fat deposits to produce energy, the triglycerides in the fat cells are removed. Then, these are broken down into fatty acids and glycerols and are then absorbed into your muscle tissue and internal organs where they are then broken down even further through various chemical processes. If the products leftover from these chemical processes are not used by the body as energy, they are then considered waste products and need to be removed from the body. This is where the role of water comes in.

Water is the vehicle used to remove these waste products from the body. The leftover materials from the fat breakdown are then filtered out of your organs by the water that you drink. The water carries the waste to your bladder where it is then expelled from your body through your urine. It is important to drink enough water each day to keep you hydrated and facilitate the breakdown and elimination of fat cells. 

Many sources claim that you should be consuming around 8 glasses of water per day, but this number can largely vary depending on your size, how often you are exercising and even how hot it is outside. Try and keep drinking water consistently throughout the day and consider water before soda, fruit juices or other sugary drinks as these can actually dehydrate your body even more. Often a lack of energy and even headaches throughout the day are simply caused by mild dehydration. It is a good idea to make a conscious effort to drink more water. A little extra is definitely better than not enough!

The Fat Flush Water Recipe -And How It Works

2 Liters (64 oz.) Spring Water

1 Organic Tangerine, sectioned

1/2  Organic Grapefruit, sliced

1  Organic Cucumber, sliced

4 Organic Peppermint leaves

Ice, (made from spring water)

Mix in a pitcher before bed and drink throughout the entire next day. Please consider using organic produce for this, if it is unavailable to you, thoroughly wash the produce before adding it to the water.

The tangerine increases your sensitivity to insulin, stabilizes blood sugar and because they are high in vitamin C, you increase the fat burning during exercise 

  • Tangerine increases your sensitivity to insulin, stabilizes blood sugar, and stimulates genes to burn fat.
  • The grapefruit will increase metabolic energy, burn fat and increase energy
  • The cucumber helps you to feel more full, and acts is a natural diuretic which means less bloating and water retention
  • The mint leaves aid in digestion

This is considered a fat flush, meaning that you will still need to do the exercise that is required to break down the fat, so that it can then be eliminated by the body. Proper nutrition also plays a huge role, its not about restricting calories, but making sure to get enough calories for your body from healthy, lean, whole foods. At the very least, this tasty water recipe will give you some added nutrients throughout the day, and help to ensure that you are drinking enough water.

Despite the fact that organic food is your healthiest option, buying it isn't always feasible. A recent study conducted by the Consumer Reports Food Safety and Sustainability Center found that, overall, organic foods cost 47 percent more. And if cost isn't a limiting factor, not everyone has equal access to fresh produce (let alone organic produce), such as those living in food deserts.

Organic trumps all, since it's better for you and the environment, but the Consumer Reports study points out that eating conventionally grown produce is still better than not eating any fruits and vegetables. Here are five ways to protect yourself if conventional produce is your only option.

#1. Look for Country of Origin
Knowing where your food comes from matters. If you're stuck buying conventional produce, aim for these very-low-risk options, according to Consumer Reports:

• Asparagus grown in Mexico
• Avocado grown in Chile, Mexico, or Peru
• Blueberries grown in Uruguay
• Broccoli grown in America
• Cabbage grown in Canada, Mexico, or America
• Cantaloupe from Honduras or Mexico. Avoid those grown in America
• Celery grown in Mexico
• Cilantro grown in America
• Eggplant grown in Honduras
• Green onions grown in Mexico
• Mangoes from Mexico
• Mushrooms grown in Canada
• Onions grown in Peru or America
• Papaya grown in Belize, Brazil, Quatemala, Jamaca, Mexico, or America
• Pineapples grown in Costa Rica, Ecuador, Mexico, or America
• Prunes grown in America
• Spinach grown in Mexico
• Sweet corn grown in Mexico or America
• Watermelon grown in Guatemala
• Winter squash grown in Guatemala, but not America.

#2. Avoid the Worst Offenders
The Environmental Working Group identifies the most pesticide-laden produce on the market, naming it the Dirty Dozen list. Limit eating these foods whenever organic options aren't available.

To add to this list, Consumer Reports says high-risk produce (in terms of pesticides) include peaches, tangerines, plums (from Chile, but not America), apples (from America, but not New Zealand), green beans, bell peppers, hot peppers, and sweet potatoes.

#3. Clean Your Produce
Thoroughly washing your produce can help clean off the pesticides. Researchers at Consumer Reports recommend washing fruits and vegetables for 30 seconds to a minute, using a produce brush when possible. They even suggest washing foods that you're going to peel to help avoid contaminating your clean food with pesticides.

#4. Grow Your Own
Don't want pesticides in your food? You can choose not to put them there if you grow your own food. You'd be surprised what you can grow, even in a small space.

#5. Don't Rely on Organic Canned Foods
Organic canned foods sounds like a great way to eat organic on the cheap, but you're just swapping out one evil (pesticides) for another (BPA). The only organic canned-food brand that does not contain BPA or harmful BPA replacements is Eden Organics. Opt for frozen or dried organic foods, instead. Dried organic beans are not expensive, and Consumer Reports found that frozen organic foods are sometimes cheaper than conventionally grown ones.
