Satisfy your cravings with three of my favorite Mexican-American recipes to celebrate this day.
GUACAMOLE
Ingredients: Always organic!
* 3 avocados - peeled and pitted
* 2 T. lime juice
* 1/2 tsp. sea salt
* 1/2 cup diced onion
* 3 T. chopped fresh cilantro
* 2 roma (plum) tomatoes, diced
* 1 tsp. minced garlic
* 1 pinch ground cayenne pepper
Directions:
For smooth Guacamole -
1) Add all the ingredients to blender, except the onion and tomatoes, and process until smooth. Then mix in the onion and tomato.
For chunky Guacamole -
1) In a medium bowl, mash the avocados with a fork and add the remaining ingredients.
Refrigerate for 1 hour for the best flavor or serve immediately with taco chips. Serves 4.
MEXICAN CHICKEN & BEAN CASSEROLE
Ingredients:
* 1 lb. chicken ( I use Bare), cooked and shredded
* 2 (16 oz) cans black beans, drained
* 1 (16 oz) can corn, drained
* 1 (8 oz) can tomato sauce
* 1 cup salsa
* 1 cup red onion, chopped
* 1 green pepper, diced
* 1/4 cup chopped cilantro
* 1 T. minced garlic
* sea salt and pepper
* 12 oz shredded cheese
Directions:
1) Preheat oven to 350 degrees.
2) Combine the chicken, beans, corn, tomato sauce, salsa, onion, bell pepper, cilantro, garlic, sea salt and pepper in a bowl.
3) Place half the mixture in a 13 x 9 inch baking dish and sprinkle with half the cheese.
4) Add the remaining chicken mixture and sprinkle with t6he rest of the cheese.
5) Bake for 30 minutes and let stand for 5 minutes before serving.
*Add tomato or cilantro as a garnish on the side -

Cinco de Mayo, the day Mexico celebrates its victory over France in the Battle of Puebla in 1862. This holiday is extremely popular in the US with Mexican-American citizens who celebrate with parades, parties and an array of Mexican foods.

FRESH STRAWBERRY MARGARITA SMOOTHIE
Ingredients:
* 2 oz tequila
* 1 oz triple sec
* 3 oz lime juice
* 1/2 cup fresh organic strawberries (trimmed)
* Raw honey ( about 1/2 T. to sweeten) - optional
* 1/2 cup crushed ice
* salt or sugar rim of glass
Preparation:
* Puree in blender until smooth and garnish with a fresh strawberry on the rim.
