Easter Dinner Recipe Ideas - Salad

Marinated Cucumber Salad


4 organic hothouse cucumbers
1 small red onion
2 sprigs parsley (optional)


1/2 cup organic white balsamic vinegar
1 tsp raw organic honey
1 tsp organic minced garlic
1 tsp organic lemon juice


1) Slice cucumbers (about 1/4 inch thick) and add to a bowl.

2) Thinly slice red onion and chop into pieces.  Combine with cucumber                

3) Add the marinade mixture and pour over ingredients in bowl.

4) Toss and let sit overnight in the refrigerator (it tastes good right away, but tastes even better once the ingredients have had time to marinate.
