Easter Dinner Recipe Ideas - Dessert

Organic Pound Cake  

Ingredients:

3 1/2 cups organic rice flour
1 T organic baking powder
1/2 tsp sea salt
1 cup organic butter
2 cups organic coconut palm sugar
4 organic eggs
1 tsp organic vanilla extract
1 cup coconut milk 

Instructions:

1) Combine dry ingredients and set aside.

2) Cream butter with mixer (or blender) and gradually add coconut palm sugar, beating between additions.

3) Add eggs, one at a time, and beat well.  Add vanilla extract.

4) Blend in dry ingredients and alternate with coconut milk;  always begin and end with dry ingredients.


Bake at 325 degrees for about 1 hour (when baking with rice flour, it takes a bit longer).  Makes 2 (9 x 5-inch) loaves.  Cut into slices.

*Top with fresh organic strawberries and organic whipped cream.
