Deli-Style Grilled Rachel Sandwich



A warm Grilled Rachel is one of my favorite sandwiches and tastes incredible. In the past, when I had a craving for a Grilled Rachel or a mouth-watering dining experience, I would go the best deli in my neighborhood.

The Lincoln Del was a popular delicatessen in St. Louis Park Minnesota and only a few blocks away. Unfortunately, The Lincoln Del closed for business in 2000.  I sadly miss their one-of-a-kind delicious foods at the 'Del', as it was fondly called by their loyal customers for so many years.

Here is my version of the delicious Deli-Style Grilled Rachel Sandwich ~

Ingredients:
1 tablespoon organic butter, softened
2 slices organic rye bread, lightly toasted
1/2 cup organic swiss cheese, shredded
1-2 slices organic roast turkey, warm
1/4 cup organic sauerkraut, squeezed, drained
1 tablespoon organic thousand island dressing (recipe below)

Directions: 
  • Heat a nonstick pan over medium heat.
  • Butter the outside of each slice of bread, sprinkle half of the cheese on the inside of one slice of bread, top with the turkey, sauerkraut, dressing, the remaining cheese and finally the other slice of bread.
  • Add the sandwich and grill until golden brown and the cheese has melted, about 2-4 minutes per side. Serve with a dill pickle and chips.

Homemade Thousand Island Dressing
1 cup organic mayonnaise
2 tablespoons organic ketchup
1 tablespoon apple cider vinegar
2 teaspoons raw honey
2 tablespoons organic chopped pickles
2 tablespoons finely minced onion
1/8 teaspoon sea salt
1/8 teaspoon pepper

Combine all ingredients in a bowl. Use dressing to make a grilled rachel sandwich or on your favorite salads.
