Organic Fruit Pizza



I love making this healthy fruit pizza as farmers markets are opening for the season.  It's a healthy dessert and so yummy!   My recipe begins with an organic whole grain sweet crust, then topped with a creamy filling.  Add your own fruit design on top with an array of berries, kiwi, bananas, pineapple, oranges, grapes or whatever suits your fancy.

Fruit Pizza is fun to make for the entire family, and especially for the kids because they can help to make the fruit design and they will love eating it!


Ingredients: 

    For the crust:

2 cups  rice flour or almond flour
2 T  coconut flour
1/2 tsp  unflavored gelatin
1/2 tsp  baking soda
1/2 tsp  sea salt
6 T  unsalted butter, melted
1/4 cup  raw honey
2 tsp  vanilla extract

      For the filling:

1/4 cup  coconut milk
1/4 cup  raw honey
1/4 cup  coconut oil 
1 T  vanilla extract
1 cup heavy cream (whipped)
Berries & Fruits


Directions:

Preheat oven to 350 degrees and adjust rack to middle position.  Butter a 12-inch round baking pan or pizza pan.  Whisk together the rice flour, coconut flour, gelatin, baking soda and sea salt in a large bowl.  Stir in melted butter, honey and vanilla until a dough forms.  Form dough with your hands and spoon onto the pan.  Evenly press dough into the pan to cover the 12-inch diameter. Bake for 10-12 minutes until just golden brown.  Cool.

Place coconut milk, raw honey, coconut oil and vanilla extract in a blender or food processor. Blend  3-5 minutes until smooth.  Fold in whipped cream.  Pour filling over cooled crust and spread evenly.  Chill for 2 hours.

Top with berries and fruit & serve.

Easter Dinner Recipe Ideas - Dessert

Organic Pound Cake  

Ingredients:

3 1/2 cups organic rice flour
1 T organic baking powder
1/2 tsp sea salt
1 cup organic butter
2 cups organic coconut palm sugar
4 organic eggs
1 tsp organic vanilla extract
1 cup coconut milk 

Instructions:

1) Combine dry ingredients and set aside.

2) Cream butter with mixer (or blender) and gradually add coconut palm sugar, beating between additions.

3) Add eggs, one at a time, and beat well.  Add vanilla extract.

4) Blend in dry ingredients and alternate with coconut milk;  always begin and end with dry ingredients.


Bake at 325 degrees for about 1 hour (when baking with rice flour, it takes a bit longer).  Makes 2 (9 x 5-inch) loaves.  Cut into slices.

*Top with fresh organic strawberries and organic whipped cream.

Organic Dark Chocolate Fudge Brownies


Even if you eat healthy organic foods, it doesn't mean you can't enjoy a sweet chocolate treat once in a while.  For my recipe, I use Green and Black's 72% cacao dark chocolate.

Studies show that dark chocolate is good for your heart and your brain plus it's high in vitamins, minerals and full of antioxidants.

My recipe contains all healthy organic ingredients and they are so rich you won't need any frosting!

Ingredients:

1/2 cup pure butter
2 squares (2 ounces) unsweetened organic dark chocolate
3/4 cups organic raw honey
2 organic eggs
1 tsp organic vanilla extract
3/4 cups organic rice flour or organic all-purpose flour
1/2 cup chopped walnuts (optional)

Easy Prep:

Preheat the oven to 325 degrees.  Grease 8 x 8 x 2 inch baking pan with a drizzle of olive oil. Melt butter and chocolate in saucepan and remove from heat.  Pour mixture into a bowl and stir in the honey.  Add eggs and vanilla; beat slightly just until blended.  Stir in flour and nuts. Spread batter in pan.  Bake for 25-30 minutes.  Cool and cut into bars.  Makes 16.


I've always loved chocolate as most of you do as well.  Don't deprive yourself  of this decadent pleasure - make sure you choose to eat dark chocolate for the health benefits it provides.
